This is the dark horse/cult fave/chef's choice of our line up and one of our hardest working pantry shortcuts — go ahead and sub it for garlic in most recipes! The garlic is sloooooow roasted to take the edge off to reveal a savoury, bright, spice-forward (but not spicy), garlicky, all-purpose pantry hero!
